Gerd friendly muffins - by KM McDowall
1 egg white
1 teaspoon vanilla essence
1 small tin 165mls coconut milk
1 dessert spoon maple syrup
Mix.
Add and Stir through
1 mashed banana
1 grated apple
In a separate bowl combine
1 cup rice flour
3/4 cup desiccated coconut
1 1/2 teaspoons baking powder
2 teaspoons cinnamon
Blend wet into dry ingredients.
Portion into greased muffin tray. Makes 8.
Bake at 180°c or 300°f for half hour on top shelf.
